Soup Kitchen

Over the past few weeks I've been making lots of soup ... it seems just the thing to comfort us on these dark days.
So far I've made:

Mushroom
Red Pepper and Courgette
Butternut squash and rosemary
Winter vegetable
Minestrone
Lentil
and right now I've got a pan of oxtail soup bubbling away on the hob ... it needs to simmer for 4 hours to make the meat tender!!! I think I'll make some dumplings to serve with it tomorrow.

My favourite so far has been Chicken, Sweetcorn and Noodle which had a definite Chinese flavour.

I've got into the habit of making a stock every time I have a chicken carcass and then trying out some recipes. Having time to cook has been one of the upsides of convalescence. We've never eaten so well!

I've been using up one serving and then freezing the rest in single portions. They will be handy for me when I return to work. I know I'll be having a super healthy lunch with completely natural ingredients (which is my aim for all our meals these days). I've bought myself a smart soup flask too and a new lunchbox.

I actually found my old lunchbox in a cupboard the other day, where it had been flung on that awful day in May when I had to leave school ... dare I say it .... yes ... horror of horrors ...it still had something unidentifiable lurking in a plastic box. I nearly threw up!!!!

Next job is to make up a batch of super healthy sandwiches to go with the soup!

  1. I need to get back into soup making too! Yours sound delicious especially the butternut squash and rosemary one. You will put Jamie Oliver's school packed lunches to shame with your fresh soup! I am glad you got rid of that old lunch box lurking in the cupboard!!! x

  2. Soup is such a healthy good thing to eat. I would eat it every night for supper if I could. My husband is a meat and potatoes type guy so soup is usually just once a week. Your selection of soups sounds yummy.

  3. I'm getting into soup too. Making them for G to take to work. This week was chickpea and broad bean.Sounds vile, but he liked it!

  4. Sounds delish. I made one veg one so far but I still have several leeks in my veggie patch to use. I try to avoid soups with meat in as we eat quite a lot of meat anyway.

    I'm fairly new to your blog & sould scroll back but it's always time to do this that is pressing. Are you a teacher ? WE have had so many here had to go on sick leave but it's wonderful when they return !

  7. I'm another big fan of homemade soup. There's nothing more comforting than a big bowl, with a hunk of fresh bread and maybe a piece of cheese too! You were brave cleaning out your lunchbox! I think I'd have been tempted to get a new one!

  8. I love soup too. Especially when you can use chicken stock and get an extra meal from your chicken....I use it to help justify buying organic chickens. It must be quite strange to be thinking about going back after such a time off, but I bet a new flask and lunchbox helps a little bit. Juliex

  10. I've just cooked up another batch of pumpkin and sweetcorn (my favourite at the moment). I used half the pumpkin, put the other half in the freezer for next week and made eleven individual portions. Tasty, healthy, nutritious and cheap! Have a good week. Ros

  11. Must be the time of year, I've been making soup to stock the freezer too just like a squirrel storing nuts (only hopefully a bit tastier).
